WThis is a simplified version of a drink featured on the seasonal cocktail list. It's a party-sized pre-mixed that is packed full of flavours associated with festive period, making it excellent for your holiday party. Reserve the remaining citrus syrup for brunch beverages, desserts, or for more rounds of bikinis.
Bikini Recipe
Makes enough for 10 people
For the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
For the Premix (makes 850ml, enough for 10)
400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (see above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish
Instructions
To prepare the Syrup: Put every items in a pot, bring to a gentle boil, agitating to dissolve. Then, turn off the heat and leave to reach room temperature completely. Pour to a sealable bottle, cap it keeping it chilled, where it will keep for around four weeks.
For the Cocktail Base: Mix all the liquid ingredients into a big jug, allow it to infuse for an hour, then filter it preferably using a fine cloth, making it perfectly clear.
For serving: Measure 85ml from the premix into a stirring glass packed with ice, and agitate lightly for about 60 seconds until cold. Pour to a frosted cocktail glass or a similar vessel, garnish with a few cranberries and finish with a brief mist with the mandarin essence above the glass.
